Among the flours naturally gluten free there is the almond flour, which is widely used in Papa Confetti‘s artisanal production. The consumption of almond flour is recommended also to those who doesn’t suffer of gluten intolerance or allergy: the almond-flour gots Vitamin E and monounsaturated fat, therefore is low-carbs and it is good for your health!
Gluten Free Desserts: Macarons
Almond-flour is the main ingredient in macarons, which therefore are the most popular gluten free desserts. Some pastry chefs add wheat flour to the pastry to make it smoother and avoid cracks on the surface. However, macarons Papa are 100% gluten free (and their surface is still smooth!).
Gluten Free Desserts: Biscuits with almond-flour
The almond-flour is also perfect to bake delicious biscuits. If you want to bake them at home, here are a few tips: add beaten egg whites to the dough to attenuate humidity (which is given by the almond-flour). Moreover, don’t bake them at high temperatures, because the almond-flour burn quicker. To decorate your biscuits made with almond-flour you can place a slice of almond on top of them. Lastly, we invite you to try them together with a glass of almond milk!

Gluten Free Desserts: sugar-coated almonds
Sugar-coated almonds are basically a gluten free dessert. However, sometimes there is gluten in the coating, but this never happens in Confetti Papa‘s artisanal production. Our sugar-coated almonds are always gluten free, because we want that everybody -really everybody- can enjoy their deliciousness.
Gluten Free Dessert: Marzipan
Marzipan, or almond paste, is a confectionery made of sugar or honey and almond meal (ground almonds) very common in Sicily but loved all over the world. It is often made into sweets and shaped in the most creative and original forms, although traditionally the most common shapes are those of fruits (so called “frutta Martorana”).
